Oatmeal Chocolate Chip Cookies

Happy Valentine’s Day

I hope everyone is having a great Valentine’s Day!  I was happy that we didn’t have another snow day, only a delayed opening.  It gave me a chance to make the kids a few special treats. First there were pancakes.  They’re totally just pancakes with powdered sugar and pink sprinkles, but the kids loved them.   We also had pink smoothies!  (Strawberries, bananas, almond milk and chocolate!)  Valentines Day Cupcakes

I actually started my little man’s valentines cards last week, but could never find the most important part, little plastic bugs.  I figured what the heck, I’ll just print out some bug pictures and call it a day.  Better for the environment anyway.  All the crap just gets thrown in the trash anyway.  I used this free printable and printed on brown card stock.  My girls cut and pasted everything for him, because he was not interested.  The bugs are free clip art.Happy Valentines Day Love BugSmart Jr made valentine’s for her sister to give out to the boys in her class and I made some for the girls.  We hot glued bouncy balls on all of them after she wrote the names on the back.  She’s in kindergarten now and her teacher insists on the kids writing the to and from themselves and reading each name to the class.  I love that!Happy Valentines Day - So happy you bounced into my life

And now here’s my gift to you…  Yummy oatmeal chocolate chip cookies!  Of course you’re going to have to make them yourself because, well, I’m not at your house right now.  But they’re delicious.  And kid approved!    It’s my very own recipe so let me know what you think.smart-girls-diy-oatmeal-chocolate-chip-cookies

Oatmeal Chocolate Chip Cookie Recipeoatmealchocolatechip

Ingredients:

  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 1 cup flour
  • 2 cups oatmeal
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 2 tsp water
  • 2 cups chocolate chips

Directions:

1.  Preheat oven to 350°F.
2.  Throw everything in a bowl and mix.
3.  Drop by large spoonfuls onto ungreased pans and bake for 12 minutes, or until edges are nicely browned.

I seriously love how these cookies turn out.  Yummy!  I’m going to go have one right now!
